These Chocolate Chip Rolo Cookies are a quick and easy way to spruce up a classic treat in a way that is crowd-pleasing-worthy and holiday-exchange ready! Chances are, with ingredients already in your pantry and the addition of a bag of Rolo candies, you’re ready to go!

I’m sure that, like me, many of you have heard rumors on Pinterest and other social sites of a mythic cookie that boasts a Rolo candy in its center!  Well, I’m here to tell you that they are not a myth.  They are REAL!! And de-licious!

Rolo Candies

I’ve seen variations of this cookie posted around, but none have ever captured me enough to want to make them.  Most of them are a chocolate cookie, or peanut butter, with a Rolo candy in the middle.  I love the idea of the Rolo, but none of the cookie dough recipes ever appealed to me much.  That is … until … my amazingly awesome hair stylist, Danielle at the Me Salon, mentioned that she & her husband made them with a chocolate chip cookie dough.  For some reason, this very simple & obvious idea had never occurred to me before.

Light Bulb!  A few days later, I used my favorite chocolate chip cookie recipe, added a Rolo to the middle, and baked them to chocolatey, gooey, caramely perfection.  My 4/yo daughter, who is obsessed with all things caramel, almost fainted when she ate her first one.  Yes, they are that good … and so, so, so simple!!  Next time you want to impress all your friends with a “fancy” cookie, make these!  (just don’t tell them how easy it is)

In order to “stuff” my cookies with the Rolo candies, I used my favorite cookie scoop to portion out all the dough.  I then mashed a Rolo into the center of each dough ball & smushed the dough evenly around the candy.  You’ll want to make sure you use silicone baking mats, or parchment paper, to line your sheets.  Some of the cookies will leak a little caramel through their bottom dough … making them even yummier than the rest!

Of course, you don’t have to be as closed-minded as I was.  You can stuff a Rolo inside whatever your favorite cookie dough recipe is!  Get creative with them. There’s really no such thing as a yucky cookie! 🙂

The classic chocolate chip cookie takes on a new twist when stuffed with a Rolo caramel candy! Deceptively easy & addictively delicious.

Ingredients

  • 2 ¼ c. All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 sticks Butter, room temp
  • ¾ c. Sugar
  • ¾ c. Brown Sugar, packed
  • 1 tsp Vanilla
  • 2 Eggs, room temp
  • 1 c. Mini Semi-Sweet Chocolate Chips
  • 36 Rolo candies unwrapped

Instructions

  • Preheat oven to 375°.
  • In a large bowl, combine flour, baking soda, & salt. Whisk to combine & set aside.
  • In another bowl, beat together butter, sugars, & vanilla until creamy. Add eggs, one at a time, beating well after each addition.
  • Using a paddle attachment (or whisk), slowly incorporate flour mixture into butter/sugar mixture. Stir in mini chocolate chips.
  • Drop rounded tablespoon portions of dough onto prepared cookie sheets. Push 1 Rolo candy into each mound & shape dough around to fully cover the candy. Form into a ball & replace on cookie sheets.
  • Bake in preheated oven for 9-12 mins until lightly golden brown. Cool for 5 mins on cookie sheet before transferring to a rack.

    We love baking chocolate chip cookies and always look for new and different recipes. Love the idea of the ROLOS! Definitely a keeper!

    • Same! Which is one reason why we love this recipe so much. Whenever we take them somewhere, there’s never a duplicate.

    There is a trick to using caramel in baking. Sometimes it comes out rock hard. The Rolo caramel looks like it may be formulated to work right.

    • You are very right!! This recipe is spot-on for creamy, melty caramel that isn’t a hard candy center.
