This crock pot winter squash soup recipe will satisfy your fall cravings, is an easy fix for busy weeknights, and is jazzed up with goat cheese crumbles!

The whole world seems to have burst into color overnight! Deep oranges, fiery reds, & flashes of yellow fill the earth with each gust of fresh air. Though the weather is turning cool, Fall warms my soul & grounds my heart. It is a deeply nourishing preparation for the winter to come.

Much like the emotional fulfillment of this season, the food is also warm & hearty, uplifting & reminiscent, colorful & rich.  Some of my all-time favorite foods blow in with the Autumn breeze. For example, root vegetables and winter squashes!

This hearty and bright Crock Pot Winter Squash Soup with Goat Cheese Crumbles is not only among some of the best fall foods. It is also made extra-easy with the use of a crock pot. Plus, it adds a depth of flavor with warm spices that will leave you satisfied.  Pair it with some sour cream or top it with crumbled goat cheese and a hunk of rustic bread.  In addition, I made Whole Wheat Bread Bowls to serve it in (dinner roll-sized ones for the kids), which went over great for my family!  It makes enough for a special occasion, holiday meal, or when entertaining company.  Include a toppings bar (chives, croutons, roasted vegetable chunks, etc) for added personalization. Top off the meal with homemade pumpkin spice lattes and blueberry oatmeal cookies! Done.

Tasty Tips for Winter Squash Soup

Alternatively, if you’d like a more subtle spice flavor in your soup, cut the pepper, paprika, & cumin in half. Just remember that the sour cream and/or goat cheese will balance out the initial warmth really well!

* Cook’s Tip: one of the handiest items in my kitchen is my Cuisinart SmartStick Hand Immersion Blender – which makes blending soups like this one a breeze … and with little extra clean up!!! Instead of scooping hot batches of veggies into my blender & then dumping the piping-hot puree into another bowl so I can start on the next batch, I just use my SmartStick to blend it all right in the pot I cooked it in!!  If you don’t own an immersion blender, I highly recommend this one!!  It comes with several attachments that make creating salsa, chopping nuts, whipping cream, and so much more easier than ever!  Obviously, I cannot use enough exclamation points when talking about this piece of kitchen-magic!!!!  🙂

Butternut squash, acorn squash, & warm spices come together in the crock pot to make this hearty Winter Squash Soup an instant Fall favorite. Easy enough for a busy weeknight dinner, yet refined enough for your holiday meal!

Ingredients

  • 1 lg Butternut Squash; peeled, seeded, & cut into 2" cubes
  • 1 lg Acorn Squash; peeled, seeded, & cut into 2" cubes
  • 1 lg Yellow Onion, quartered
  • 2 Carrots, cut into 2″ pieces
  • 1 tart Apple; peeled, seeded, & quartered
  • 1 tsp ground Black Pepper
  • ¼ tsp Salt
  • 2 c. Chicken Broth
  • 3 c. Water
  • 2 tbsp Heavy Cream
  • ¼ tsp Paprika
  • ¼ tsp Cumin
  • Sour Cream and/or Goat Cheese Crumbles for serving

Instructions

  • Add first 9 ingredients to crock pot & cook on HIGH for 6 hours. Add remaining ingredients & using an immersion blender or small batches in a blender, blend the contents of the crock pot until smooth & creamy.
  • Serve with a dolllop of sour cream or crumbled goat cheese.
