Easy Oatmeal Blueberry Cookies

Once you’ve tasted these Oatmeal Blueberry Cookies, you will never go back to plain old oatmeal raisin again! Warm spices + a chewy texture + tiny bursts of tart sweetness = The World’s Perfect Cookie.

I’m going to be fully honest with you here.  If you make these cookies, it will change your life.  Well, probably.  I mean, I can’t make any blood covenants or anything, but I can tell you from experience that almost every person who has ever tasted this cookie has walked away different.  These cookies awaken something in you.  Like the bite of a vampire, they cause you to crave & obsess.

I have, literally, dreamt about these cookies.  Just the thought of them, creates a longing in my center; a hunger that wasn’t there a moment ago.  A thirst for Oatmeal Blueberry Cookies!!! MUAHAHAHAHA.

When my oldest was little, she had trouble with fruit.  It didn’t like her much.  One exception, though, was blueberry.  She could eat pints of them and be happy as can be.  So, I decided to try my hand at reinventing an old classic: the oatmeal raisin cookie.  (Like the time I crammed caramel candies into the center of a classic and hit gold with Chocolate Chip Rolo Cookies!) I found a great recipe that used just the right combination of spices & sugar & substituted the raisins for dried blueberries.  At first taste, like lightning striking Frankenstein’s monster, I knew I had created something wonderful & terrible.

Oatmeal Blueberry Cookie Recipe

They’d be delicious with dried cranberries or chopped dried cherries, too!  Be careful not to over-bake them – they should stay light & creamy in the center & just slightly brown on the edges.  They’ll “harden” into a perfectly chewy cookie as they cool.  Using silicolne baking mats helps! Oh, and they keep well, too!  Even days later, they’re moist & delicious.

Ingredients

  • 2 sticks unsalted Butter, softened
  • 1 c. packed Brown Sugar
  • ¾ c. granulated Sugar
  • 2 Eggs, beaten
  • 1 tbsp Vanilla Extract
  • 1 ½ c. All-Purpose Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg, freshly grated
  • 1 ½ c. dried Blueberries
  • 3 c. Old Fashioned Oats (NOT instant)

Instructions

  • Preheat oven to 350°.
  • In a mixer with a paddle attachment, cream butter until smooth & light. Add sugars, one at a time, and beat for 3 minutes, or until fluffy. Beat in eggs, one at a time, and vanilla.
  • In another bowl, combine flour, salt, baking soda, cinnamon, and nutmeg. Whisk to combine. Slowly add dry ingredients to butter mixture. Add blueberries & oats. Stir just until combined.
  • Drop tablespoon portions of dough, 2″ apart, onto prepared cookie sheets (parchment paper or Silpats work best).
  • Bake until edges of cookies are lightly browned, about 10 – 12 minutes. The centers will still be very light in color & fluffy until they’re taken out of the oven. Be careful not to over-bake them or they’ll be rock hard.
  • Allow to cool on pans for 1 minute. Remove to a wire rack to cool completely. Store tightly covered.

    Hello! Can fresh blueberries and self rising flour be used?

    • Yes, you can absolutely use fresh blueberries instead of dried, just watch the moisture level of your cookies and add additional flour, if needed.

      Self-rising flour can definitely be used instead of all-purpose. To do so, swap cup for cup and omit the baking powder and salt (you DO want to still add the baking soda).

      Hope your alterations turn out well! Let me know if they do.

    I am really attempting to find a recipe my father in law can eat. Your recipe sounds decadent! The problem I am having is that he is dairy free, no-low sodium, and has bad acid reflux. I really want to make him something he can truly enjoy for Father’s Day. He loves blueberries and Oatmeal. Any who, can I substitute the butter for anything else? Can I omit the salt? Or will that make much difference.

    • @Denee – You can absolutely substitute the butter for a dairy-free option like Earth Balance. You can definitely omit the salt – it shouldn’t affect the way the cookies bake, but will make them a bit more bland. I’m sure they’d still be delicious, though!

    I REALLY like oatmeal raisin cookies. But oatmeal BLUEBERRY?!!!! I’m pretty sure no one in my family has ever had/made these! I have GOT to try them!! Blueberries are one of my favorite fruits, and oatmeal cookies are towards the top of the list of favorite cookies. So what’s not to love?
