As a busy mom, I love recipes that work double-time.

Healthy Baked Tostada Shells

These baked corn tostada shells are SO easy to make, using ingredients you probably already have on hand. In fact, the only essential ingredient is corn tortillas. The cooking spray and salt are both optional, though they do add a lot of flavor and texture to the final product. Personally, we keep a bag of Mission Gluten-Free Extra Thin Yellow Corn Tortillas in the freezer. I use them anytime we have gluten-free guests over on a taco night. Plus, I use them to make these tostadas. Alternatively, I cut them into triangles and bake them in a similar method to make healthy baked tortilla chips. Just let the corn tortillas thaw in the bag in the fridge or on the counter before you use them.

Homemade baked tostada shells offer a healthier alternative to fried versions, made by baking corn tortillas in the oven until perfectly crunchy, providing a flavorful base ready to be topped with your favorite ingredients.

Ingredients

  • 12 6" Corn Tortillas (we use Mission Extra Thin Yellow variety)
  • Cooking Spray (or water)
  • Salt (optional)

Instructions

  • Preheat oven to 400°F.
  • Arrange corn tortillas on baking sheets, making sure they don't overlap. Lightly spray both sides of each corn tortilla with cooking spray (or lightly brush with water for an oil-free version). If desired, sprinkle a little salt over the tortillas for added flavor.
  • Bake for about 8-10 minutes, turning the tortillas halfway through, until the tortillas are crispy and lightly golden brown. Keep an eye on them to prevent burning!
  • Remove from oven and allow to cool. Serve with salsa or guacamole, or use them as part of your meal.

Notes

Store unused tostadas in an air-tight container (ziplock bags work great). They will stay crispy and fresh for a week or more!
We use these tostadas with our favorite Taco Tuesday meals, like DIY Crunchwrap Supremes and Chicken Tostadas with Guacamole. You can crush leftover tostadas as the crust for Taco Pie, too.
