It is no secret that Taco Tuesday is a favorite weekly tradition in our house, and these no-baking-necessary Chicken Tostadas with Guacamole and Pico de Gallo are a regular entree! It’s really up to you how much time you invest in this meal because almost all of the components can be store-bought and/or pre-made.
Do you love guacamole? Because I love guacamole. Let’s love some guacamole together. Somehow, that did not come out the way I thought it would. Even so …
No-Bake Chicken Tostadas
Additionally, I love summer. The sunshine, the green grass, the heavy breeze, the smell of the grill, the feel of a picnic bench, the food. Oh, the food of summer. I love it so much. Almost as much as I love Spring foods … and Winter foods … and Fall foods. OUH – it’s almost Fall! I love Fall foods. Wait. What were we talking about? Oh, right. Summer foods … like this awesome, fresh, and very summery Chicken Tostadas with Guacamole & Pico de Gallo recipe! And this recipe will keep you cool because it requires NO baking!
Chicken Tostadas
This recipe meets all of the summer requirements for a perfect meal: fresh, tasty, a little messy, requires NO oven or stove use, and is EASY!! That’s the beauty of a rotisserie chicken! It makes things very, very, very easy. Plus, this is the kind of food that kids love! (It’s a great way to celebrate Taco Tuesday!) Toss this meal together, enjoy it outside with loved ones, and still have loads of time to soak up the last few rays of summer. Because Fall (with its beautiful leaves & hearty foods) will be here soon.
Personally, we often use Wholly Guacamole to simplify this meal & ensure always-tasty guacamole! It is widely available, always fresh, and so much easier (and often more cost-effective) than homemade. Do not get me wrong – I love homemade everything, but I also love it when I can find a product that beats my should-have-won-some-awards homemade recipe! Wholly Guacamole products are just those! If you end up with leftover tostada shells, use them in easy DIY Crunchwrap Supremes! They’re even better than Taco Bell’s version. Trust me! Or don’t – make them and then judge for yourself.

Chicken Tostadas with Guacamole & Pico de Gallo
Ingredients
- 8 oz Guacamole (homemade or store bought)
- 1 c. Tomato, chopped
- 2 tbsp Onion, minced
- 2 tbsp fresh Lime Juice, divided
- ¼ tsp Salt
- 1 tbsp fresh Cilantro leaves, chopped
- 1 tbsp Jalapeno, seeded & minced
- 2 c. Rotisserie chicken, shredded
- ¼ tsp Smoked Paprika
- 8 6" Tostada Shells (homemade or store bought)
Instructions
- In a medium bowl, combine tomato, onion, 1 tbsp lime juice, salt, cilantro, and jalapeño. Toss with a fork & set aside.
- In a large bowl, combine chicken & remaining 1 tbsp of lime juice. Toss with smoked paprika.
- To assemble, spread 1 tbsp of Wholly Guacamole over each tostada shell, top with 1/4 c. of chicken mixture and finish each off with 2 tbsp of salsa.
