Yes, these buffalo chicken sandwiches are perfect for a game day get-together or a Super Bowl party. But truth be told, they are easy and tasty enough for any weeknight dinner. It’s one of our go-to recipes for nights when the kids have extracurricular events. Because the thought of these sandwiches wipes out any temptation towards fast food. Plus, they are so easy to put together, there is almost no additional work needed on my end. Because, let’s be honest, I’m just as exhausted as the kids!

I know the Instant Pot is all the rage these days, but I’m still in love with my Crock Pot. I usually meal plan in advance, so making sure meat is thawed (or not) isn’t a big deal. And I love prepping our meal early in the day and then forgetting about it completely until dinnertime. It just works for me. And with dishes like Cuban Pork Stew and Winter Squash Soup, I’m not giving up the slow cooker anytime soon.

Super Bowl, Game Day, Every Day

If you’re a big fan of buffalo flavor but prefer to ditch the fat associated with traditional wings, this recipe is for you! Because it’s made with chicken breasts, it’s lean, mean, and full of flavor but not of fat. Plus, you can customize the meal to fit your dietary preferences. For example, make it gluten-free by skipping the bread. Instead, serve scoops of buffalo meat on beds of lettuce. Or serve it as a “dip” with vegetables. Whenever we have a big crowd coming, we set out Hawaiian rolls and let everyone make sliders. Include a toppings bar, and you’re done! To serve, we usually dollop some ranch dip and a drizzle of wing sauce on our individual sandwiches. As with all good buffalo wing dishes, you’re gonna need napkins!

Oh, and if you want it spicier, add more wing sauce – or switch from wing sauce to Red Hot sauce. Alternatively, just keep the bottle of sauce close by. Then everyone can customize their sandwich to meet their preference.

Ingredients

  • 2 lbs boneless, skinless Chicken Breasts
  • 1 c. Buffalo Sauce + extra for serving (we prefer Frank's Buffalo Wing Sauce)
  • ½ c. Chicken Broth
  • ¼ c. Ranch Dressing (+ extra for serving)
  • 1 tbsp Honey
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Smoked Paprika
  • 6 Hamburger buns (or 12-18 Hawaiian Rolls for sliders)
  • Optional toppings: blue cheese crumbles, sliced red onion, cucumber slices, lettuce, tomato

Instructions

  • In a mixing bowl, whisk together the buffalo sauce, chicken broth, ranch dressing, honey, garlic powder, onion powder, smoked paprika, and salt & pepper (to taste).
  • Place chicken breasts in slow cooker, and pour the buffalo sauce mixture over the chicken breasts, making sure the chicken is well coated.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is tender and easily shreds with a fork.
  • Once the chicken is cooked, shred it using two forks directly in the slow cooker, allowing it to soak up the sauce. Your buffalo chicken is now ready to use, as you'd like.
  • For sandwiches, pile buffalo chicken onto toasted hamburgers, and top as desired (add'l wing sauch or ranch dressing, blue cheese crumbles, sliced red onion, cucumber slices, lettuce, tomato). Grab a napkin – you're gonna need it!

Notes

This buffalo chicken is delicious any way you serve it – on top of lettuce as a “salad,” on Hawaiian rolls as sliders, with vegetables as a “dip,” and, our favorite, on pretzel buns with a crudités slaw!
